CHELSEY’S BERRY DELICIOUS SHRIMP SALAD

This shrimp salad with berries is a healthy choice for a meal or side dish. An unbeatable combination of ingredients your taste-buds will enjoy!

Makes enough for 2 people.

INGREDIENTS

  • 2½ cups 50/50 spring mix, baby spinach
  • 1 to 1½ cups diced strawberries
  • ½ cup Feta cheese (crumbled)
  • 2 tbsp sliced almonds or sunflower seeds
  • 15 shrimp (41-50 ct)
  • Lawry’s Fresh Squeezed Lemon
  • Marzetti Simply Dressed Strawberry Poppyseed salad dressing

INSTRUCTIONS

  1. In a fry pan saute shrimp until opaque and season to taste with lemon – set aside.
  2. Layer lettuce, strawberries (don’t be shy), dressing, feta cheese, and nuts.
  3. Top with shrimp.
  4. Add strawberry poppyseed dressing to taste.

If preparing two individual salads, layering each salad separately will ensure even proportions of ingredients. Enjoy! – Chelsey
