CREAMY BUTTERNUT SQUASH SOUP

INGREDIENTS
- 1 large butternut squash, peeled, seeded, and cubed
- 2 tbsp olive oil or butter
- 1 large yellow onion, chopped
- 2 cloves garlic, minced
- 3 cups chicken or vegetable broth
- 1 cup heavy cream (or half-and-half for a lighter version)
- ½ tsp ground cinnamon
- ¼ tsp ground nutmeg
- Salt & black pepper to taste
Optional garnish: roasted pumpkin seeds, a swirl of cream, or fresh thyme
INSTRUCTIONS
- Prep the squash: Peel and cube the butternut squash (or look for pre-cut cubes in our produce section to save time!).
- Sauté aromatics: In a large pot, heat olive oil or butter over medium heat. Add onion and cook until soft and golden, about 5 minutes. Add garlic and stir for another minute.
- Simmer: Add cubed squash, broth, cinnamon, nutmeg, salt, and pepper. Bring to a boil, then reduce heat and simmer until the squash is tender, about 20 minutes.
- Blend until smooth: Use an immersion blender directly in the pot (or carefully transfer to a blender in batches). Blend until creamy and smooth.
- Finish with cream: Stir in the heavy cream, taste, and adjust seasoning if needed.
- Serve & garnish: Ladle into bowls, top with roasted pumpkin seeds or a swirl of cream, and enjoy the cozy fall flavors!
