PAM’S MINI TOMATO CUPS APPETIZER
Mini Tomato Cups are a savory and welcome addition to any party or gathering. This tasty, colorful appetizer has become a favorite for many on brunch buffets or when served up on game day. Get creative – find new ingredients to fill them and create your own unique appetizer.
INGREDIENTS
- 1 can (14.5 oz) Hunts Tomatoes diced with green pepper, celery and onion
- 8 slices of bacon cooled and chopped into small pieces
- 1 small chopped onion
- 3/4 cup shredded Swiss cheese
- 1 teaspoon basil
- 3 rolls Pillsbury Crescent Rolls
DIRECTIONS
- Mix first 5 ingredients together for your filler and refrigerate.
- Cut the Crescent Rolls into about 24 — 3 inch squares.
- Roll into small balls.
- Place each into a greased “mini” muffin pan.
- Use a floured, round kitchen tool to dip into each cup to make a hole.
- Scoop refrigerated filler into each hole. Do not overfill.
- Bake at 375° until dough is done, approx. 10-15 minutes.
OTHER FILLER IDEAS
- Grate or crumble any favorite cheese to make about 1/2 cup
- Chop uncooked sweet pepper or cooked broccoli
- Spinach
- Sausage or Ham (1 cup)
- Minced green onion
- Chopped olives or water chestnuts
